Chocolate Beetroot Cake


I’m really loving our beetroot right now. We had a few big guys in the garden that needed to come up and I’d been craving chocolate beetroot cake for days.



When I planted I just tossed in a mix of heritage beetroot seeds so we had lots of varieties come up it fun to have the element of surprise and to get to know the variety via the leaves. I love the slight differences in flavour but it’s the vibrant colours that really bring me the most joy.


It’s amazing how versatile beetroot is and it’s so very different from the horrible overly processed crap we buy in a can. We’ve grated it in salads, made pink pasta, fried beetroot chips, had cakes and made pink pickled eggs but that’s only the tip of the chard (beetroot tops can be eaten too!!) I’m keen to try making Kvass a fermented beetroot drink and if we grow enough I want to have our own pickled beetroot canned too for winter salads.

To celebrate my 50th blog post I thought I would share my favorite chocolate beetroot recipe. Now this can be make Gluten free or non gluten free depending on your budget and what you have on hand.


300g beetroot
200g dark cooking chocolate
200g salted butter (or coconut oil)
1C Brown sugar (I used half a cup as I always reduce sugar you could use stevia too)
1tablespoon cacao or cocoa
1c almond flour (or plain flour)

Chop you beetroot and boil for 30mins or until soft enough to puree. Puree it πŸ˜‰

Preheat oven to 160 celsius and grease your cake tin

In a metal bowl pop in your chopped up butter and cooking chocolate and pop it in the oven to melt (you could also microwave or use the stove top but you save energy and washing up this way)

After 5 minutes take it out and mix together until smooth.

Add sugar and cocoa and mix
Add eggs one at a time beating after each one

Add beetroot and almond flour (or plain flour) mix until smooth and silky then pour into your cake tin.

Bake for 40 mins or until knife comes out clean.


We served ours with hazelnut whipped cream and BlackBerry coulis (feel free to ask if you want the additional coulis recipe)
It was rich and delicious!
